The Old Arcana’s cooking classes have been designed to teach students how to prepare familiar flavors with elevated techniques. Some classes include demonstrations by the Old Arcana kitchen team and others include hands-on lessons that attendees will prepare themselves. All classes end with eating as we taste what has been prepared that evening. Classes are designed to be an entertaining “evening out” for individuals, couples or groups (ages 18+), so make a night of it! Grab your friends or favorite someone and enjoy a unique way to spend an evening in Darke County.

Join the “Get Kitchen Confidence” 3-Class Series!

Go one-on-one with the chef as he teaches you all of the basic skills you’ll need to prepare most any dish in this 3-class series covering fundamental skills. With hands-on experience and personal guidance, you’ll learn knife skills, the basics of roasting, and how to sauté and sauce.

CLASS 1 IN THE SERIES – KNIFE SKILLS (March 7th)
Learn the most important skill in the kitchen before heading to the stove—it’ll change your life!

In this class you’ll learn:

  • How to slice and dice like a pro
  • Which knives you really need
  • How to hold a knife for efficiency, speed and safety
  • What it means to sharpen versus hone
  • How to sharpen your knives

We’ll eat: Gazpacho and fruit salad made from the fruits of your labor!


April 11 – Class 3: Sauté

Sautéing is a basic cooking technique essential to many recipes. Because it cooks food fast, sautéing keeps the flavors vivid and bright. The word comes from the French verb sauter, which means “to jump,” and describes not only how food reacts when placed in a hot pan but also the method of tossing the food in the pan, which you’ll learn how to master on the range!

In this class you’ll learn:

  • How to cut for the best sauté results
  • The best sauté temps and tossing techniques
  • The best sauté oils and seasoning secrets
  • Basting in the sauté pan

We’ll eat: Fresh fish, chicken and vegetables, with a variety of pan sauces made by each of you at the stove!

 

May 2 – Class 2: Roasting (Rescheduled)

Roasting is one of the easiest ways to prepare a meal, but not everyone knows the secrets! Once the basics are mastered, this cooking method produces spectacular meats and vegetables for a wide variety of dishes.

In this class you’ll learn:

  • The correct way to measure doneness: Temperature! Learn the correct temps for beef, pork and poultry.
  • How and why to truss a bird for roasting
  • How to correctly tie a pork or beef loin
  • How to roast vegetables

We’ll eat: Roast pork tenderloin, herb roasted chicken and roasted vegetables

Easy Entertaining – Brunch at Home – $45
This class is limited to 9 students

APRIL 26, 2017 — 6:00PM

The Old Arcana is one of the best places around for weekend brunch. We’ve even been named “Best Breakfast Spot in Ohio” and “Best French Toast” or our famous (Bourbon Praline French Toast!) by Ohio Magazine! We can’t share Chef Jeff’s “best of” secret recipes; but we can certainly do the next best thing! During this class, we’ll learn how to prepare a complete brunch for your next gathering at home.

You’ll learn how to make:

  • Cinnamon citrus French toast
  • Arcana Quiche (with an all butter crust from scratch!)
  • How to grind and spice your own sausage blend
  • Delectable candied bacon

This is a class is part demonstration and part hands-on. You’ll watch the Arcana kitchen team demonstrate how to make sausage, bacon, quiche blend and French toast step by step, and then we’ll all learn how to roll and shape the perfect quiche crust. We’ll bake individual sized quiches for you to enjoy with us or to take home! Recipes are included.

You will be on your feet part of the time so please wear comfortable, closed-toe shoes and clothing that you don’t mind getting messy (we’ll provide aprons).
